New Year’s Eve Day Brunch

Are you staying in for New Year’s this year? I wanted to share one our favorite breakfast recipes for you to try! It’s basically a biscuits and gravy dish with eggs, sausage and cheese all combined into one. It is perfect for the entire family and can even be prepared the night before. We like to make a larger batch, but the recipe would also work for smaller dishes or muffins. A friend of mine shared this recipe with me years ago at a Mothers-of-Preschoolers (MOPS) meeting. Start by selecting your favorite baking dish. As shown, I used my Denby Natural Canvas Cast Iron one.  

Next, grab a can of your favorite biscuits. We prefer the Pillsbury Buttermilk Biscuits (Flaky Layers). Tear the biscuits into pieces and put at the bottom of your dish. 

For this recipe, I used smaller dishes so each of my girls would have a personal sized one. They thought it was so special and ate every bite :) 

Next, cook your sausage. Our favorite brand is Odum's Tennessee Pride (Mild). Layer on top of biscuits. 

Next, whisk your eggs and milk. Measurements will vary based on the size of your dish. For the larger casserole and two smaller ones, I used 4 farm fresh eggs and a splash of milk. Pour over biscuits and sausage. 

Top mixture with cheddar cheese. 

The last step is to mix up your gravy and pour over the top. You can use homemade, but to save time, we usually use Pioneer's peppered gravy mix. If you are a gravy fan, make extra to serve when the dish is ready. 

Cook at 350° for 20-30 minutes or until done. 

Serve immediately! This simple dish would be great on it's own, but for a complete at-home brunch, consider serving with fruit, bacon, french toast, etc.
